Gluten Free Chewy Chocolate Chip Cookies

If I never told you that these cookies were gluten free, you would not be able to tell. They are so chewy and salty-sweet, you wouldn't have known the difference.

Gluten Free Chewy Chocolate Chip Cookies

Ingredients:

  • 1/2 C (1 Stick softened Unsalted Butter
  • 1/2 C White Granulated Sugar
  • 1/4 C packed Brown Sugar
  • 1 tsp. Vanilla Extract
  • 1 Egg
  • 1 1/4 C Gluten Free All- Purpose Flour (Krusteaz brand works great!)
  • 1/2 tsp. Baking Soda
  • 1/2 tsp. Salt
  • 1/2 C Chocolate Chips

Directions:

  • Preheat your oven to 350.
  • Line 2 large cookie sheets with parchment paper. I use the pre-cut rectangles and fold them to fit my pans exactly. Rolled parchment also works well.
  • In a large bowl, combine the softened butter, both sugars, and vanilla. Using a spatula, mix together until it is all one uniform color. Add in the egg and mix well until no streaks remain. Don't forget to scrape the sides of the bowl.
  • In a smaller bowl, whisk together the flour, baking soda, and salt.
  • Dump the dry mixture into the wet and mix together until it forms what is commonly called: COOKIE DOUGH. It may take a while but be patient! The best things take time. :)
  • Using a medium sized cookie scoop or 2 spoons, scoop 6 cookies out onto each pan.
  • Bake the gluten free cookies at 350 for 13 minutes.

Allow them to cool for 15 minutes before enjoying with a tall glass of milk.
